New Italian Trattoria Opening in Sebastopol’s Former Flavor Bistro Space

Sebastopol is set to welcome a new Italian trattoria in the former Flavor Bistro space, thanks to Tom Rutledge of Petaluma’s RDMS Group. Rutledge, whose company specializes in hospitality-focused accounting, is spearheading the project with a team of partners from the Bay Area. The new restaurant is anticipated to open its doors in mid-to-late 2024.

With roots in an Italian-American family from New York, Rutledge aims to recapture the essence of his family’s immigrant experience through his culinary offerings.

The menu will feature classic dishes like chicken Parmesan, spaghetti and meatballs, and simple pizzas, prepared in a custom-built Mugnaini oven. In addition to these traditional favorites, the trattoria will also cater to those with dietary restrictions, offering a variety of plant-forward and gluten-free options. Rutledge, who recently discovered his own gluten and lactose intolerances, is committed to ensuring that the restaurant provides delicious and inclusive meals for all.

Although Rutledge has extensive experience in restaurant circles as a financial consultant and has attended culinary school in San Francisco, he doesn’t consider himself a chef. Instead, he envisions hiring a passionate chef who shares his enthusiasm for Italian-American cuisine.

As Sebastopol eagerly awaits the opening of this new trattoria, locals can look forward to a warm and inviting dining experience that celebrates the flavors and traditions of Italian-American home cooking.
